door gap question for prep

Hey all, Ive done some extensive work on all my door gaps on my 57 chevy truck and added metal where needed to make 3/16" clearance. Question is should I take them down to 1/4" to take into consideration of epoxy, high build primer, sealer and 3-4 coats of single stage? not sure if Iam cutting it to close to give me issues down the road.
 
i've always used a paint stick with 80grit on both sides. By the time I get primer, paint and clear it gives me just enough to avoid chipping...most of the time
 
There shouldn't be a lot of buildup because you ought to be sanding it off each time. If edges aren't diligently sanded each time, the result will be a chip prone mess. We sand our edges until there are breakthroughs right up until final primer, also clean out molding holes and keyholes etc. the same way so the vehicle goes together with no drama.
 
I used the spacers used in laying down pergo flooring. One side is 2mm and the other is 5mm
I stacked two side by side so it made 4mm and i would use that as my gauge.
I would run it up and down the gap and where it got caught is where i knew to sand.
I knew i was set once i can move it up and down the gap with no snags
