the "perfect" paint job with single stage

I have read the perfect paint job instructions, but have a small twist/concern. I will be painting my 'driver' mustang with shopline single stage urethane. I have progressed along so that I am in the final block sanding of 2k primer, and was going to use the epoxy as a sealer per the instructions. However, even in south LA its getting chilly. Good news is that on a cool night of 45 degrees my shop keeps the car at a toasty 70 F with my heat lamps on. Below that temp at night its gets too risky. However, we regularly get nightly temps warming back up to where I can paint. My concern is that if I spray my sealer the next day it may be too cool to paint if the weatherman might be off a little. Question is instead of waiting for 2 consecutive warmer days, can I just seal one a warm day and then wait for another day but just scuff the sealer before painting?
 
You only need about twenty min time between epoxy as a sealer and topcoating. One warm day? Unless I am missing something...
