Can epoxied parts set for a period of time ?

Due to the size of my garage, I'm prepping my car in sections. I've currently got the trunk and hood off and have epoxied them, did the basic filler work, and double coated them with the 2K regular build. I've block sanded these down with some 220 grit and they are relatively flat now.

So my question is...if I was to finish these and wet sand them with 600 grit, basically ready for color coats, would it be okay if they were to sit for a while ? A month or more is probably realistic...

..OR, should I just wait till I get all the pieces like this...doors, fenders, quarters, etc...then assemble them and wet sand the whole car with the 600 grit ?

Thought I remember reading somewhere that it's not a good idea to let primered parts sit around for too long...i may be wrong.

Second question....on the inside of the trunk and hood, can i just go directly to 600 grit as they are relatively in good shape ? Or do I need to step up...220 then 600 ? to get them ready for paint....

On the iner/underside areas if you can sand with just 600 that would be fine-your starting grit selection depends on how much material needs to be removed, there's really no problem with having primered parts setting for a long period of time-it's actually a good thing to let the products fully cure and shrink-then final sand. For parts that are already final sanded and setting just scuff them with a scotchbrite pad prior to sealer and paint.
