Painting/priming panels in phases

Hello, being I'm apparently very slow at this and with everything else going in life, when I complete priming & block sanding a set of panels what is the best product to leave them in till paint? Or should I just paint them as completed? I was thinking just get them finished in 2k then when ready I could scotch pad them & seal with epoxy, Or should I just go ahead and seal them with reduced epoxy till the paint? Thanks in advance guys!
 
would i be fine if i spray them in reduced epoxy, then wait till everything else is ready(couple months) then sand with 600 then paint?
 
yes . i paint everything in pieces. if you are consistent and get the pieces covered it will be fine. if not all you are looking at is blocking the panels and blending the colors together and reclear.
