Epoxy only?

I use SPI epoxy primer all through the bodywork and blocking stages up to a final blocking with 320, then do one coat of epoxy and 2-3 coats of Turbo. If I use reduced epoxy as a sealer prior to color, could I skip the application of the 2K and just use the epoxy as a final primer?

You lost me here. If you blocked your epoxy out all the way to 320, why would you put on 2-3 coats of Turbo at that point? If all the blocking was done with epoxy, and everything is level, then you are done.

The Turbo was applied over-reduced for a nice smooth finish (all over) and to help fill the 320 scratches and random 180 scratches I may have missed. I have always applied base over a 2K primer and am a little reluctant to change by just using epoxy. I have applied single stage urethane direct to fresh epoxy (after 2 hours flash) and never had any problems.
In my opinion I am not done at 320.

Ok, I think I'm catching up with you now. I'm pretty sure Turbo can be used as a sealer, but I have never done it. I use turbo all the time for blocking, and I love it for that.

If your body work is really good, and it is only scratches you are worried about, I'd spray one wet coat of epoxy to fill the scratches. Sand with 400 in a couple days, then you're ready for a reduced coat of epoxy as sealer, and then base in 30 min - 1 hour. Why use 2k if you don't need the build?
