First Time attempt at Paint job Questions

Hello, I am attempting to paint my first car, a 2000 Pontiac Firebird Drag car. Its a Stock eliminator car so all the body panels are stock OEM. I started working on it before I came upon the wealth of knowledge that exists here. I think I have probably not done some things in a correct manner and would like to get some advice on these things along with the future work on the project. It's getting cold here now, I do have a heated garage along with a 2-stage 6.5 HP 80 gallon tank compressor. The car is pretty much disassembled including the doors being off. I will list the things I have done so far.
1. Sanded outside of doors with 220 grit and then primed and blocked with 3 coats of Evercoat Featherfill G2 Poly Primer. I realize I should have put epoxy primer first but is this going to be a problem requiring me to sand it all back off? The Doors on this car are SMC. Inside parts of door are just scotch brite Red pad scuffed. There is a bare filler spot on each door jam where I patched a hole from removing the crash bars.
2. The front fenders are OEM flexible urethane that had a thin layer of black primer. Not sure what kind of primer it was but I scuffed them with 320 grit and re-primed them with SEM 1k Flexible primer. This is where I think I messed up and could use some advice going forward. Do I need to sand this down to the bare plastic?
I also did the same thing to the rear bumper cover with the same 1k primer.
Front bumper cover has just been scuffed with red scotchbrite as of now.

3. I am using two hoods for this car, the OEM flat hood and OEM WS6 Ram Air hood. I picked up the ram air hood used and had to do some repair work on it. Scratches on the top side and cracks on the bottom. I used SEM products to fix these problems, and the top of the hood has some bare spots of filler (Carbo-Fill) I planned on sanding the hood to 180 and epoxy prime. The flat hood is in good shape and the existing finish is sanded to 180.
4. The rest of car, I just planned on sanding to 180 and epoxy prime except for the left rear quarter where I filled in the gas tank door. That part of the quarter is bare metal now.
5. The cowl area under the windshield was taken down to bare metal and upon advice from a friend I just rattle canned some eastwood etch primer to keep it from rusting. I see where epoxy shouldn't be applied over it so do I need to sand it back down to bare metal? This area will be completely covered with interior pieces and exterior trim pieces.

After I epoxy prime the car I was going to 2k prime and block everything to 400 since I am going with a solid yellow color then seal with white epoxy and then color. I plan on doing the car in pieces as it will take a little while to complete. My plan was to use white epoxy and buff 2k primer because of the yellow color I am changing to. Does this sound like the right way of doing this? I am a noob at body/paint but wanted to give this a shot since I built the rest of car myself and wanted the satisfaction of doing it all but I want to do it right. I appreciate any advice and apologize for the long post.
 
Yup, read that. As I said in the beginning of the post, I started some of this before finding this site. My bad on that one. Thanks for the advice on the 1k primer, looks like I will be sanding it off. SEM makes a bumper stripper to take down to factory baked finish. I have read posts on here which state don't use chemicals to strip, but wonder if anyone has used this stuff.
