I struggle to know when I’m close enough for final epoxy. How would you finish this? I keep fooling myself that I can fill it with epoxy.. A coat of 2k? Icing glaze?

There are a couple high spot just out of frame that are starting to show metal though the epoxyAlso it looks like you have more material there, maybe block it some more and the second you see any metal peaking through stop.
I would sand it with 180 and swipe it once with filler, then another round of epoxy or 2K, whenever you have been using on it.
I use poly primer until it’s dead straight with guide coat and long blocks. Epoxy and 2k I use to refine scratches from poly.

Guide coat tells no lies…Yea I blew it with the poly. It needed more coats. I thought It was better than it was. Don’t do this enough to have that feel. I just didn’t want it to have to take that much to get it straight
Its gonna take what it takes. are these spots everywhere? You could always block it all with 180, do another coat of epoxy and then 3 more coats of poly and then go for it again. Its not too late.Yea I blew it with the poly. It needed more coats. I thought It was better than it was. Don’t do this enough to have that feel.
